The past month has included some tough moments for our family. My daughter has had three back to back ear infections. My son had a stomach virus and I've been a basket case worrying about them! Today in life we always seem busy although I'm also very firm on the belief that we make time for the things that are important in our lives. I'm sure we all have those people in our lives that always claim to be so busy but instead of getting continuously frustrated I've realized that apparently we are not that important to them. Even with all these busy times with my own family including getting my kids well we have always made time for family and the important things. Every once in awhile I try and get crafty. I found a picture of a beach themed wreath that you could display all year. I loved it so much I thought, I could make that. After a few modifications and sore fingers I produced the wreath below. I hung it up this weekend. Hopefully it will take the weather and few knocks from girl scouts. Makes me want to put some sand on my doorstep! Ha!
On my way to work I pass a restaurant that always puts a funny saying on their sign. This morning's message was "Is it okay to listen to AM radio in the afternoon?" Ha! Very cute, I must say. Who loves Tacos? I do, I do! All the same taco ingredients in a cute little package! The only trick is finding the Wonton wrappers. I tried Kroger, Wall-mart, and Randall's which are all very close to me and had no success. Thankfully, my husband works near a Phoenician store. They had them! You'll have to look at a specialty food store. They will be in the freezer section near the puff pastry and filo dough. You can keep them in the freezer for quite some time and then thaw in the fridge before making this recipe or any other. They hold their shape really well. I bake mine until crispy which is my preference but you'll figure out what tastes best for you.
