Chicken and Lemon Cream Sauce

Anything creamy and my husband and kids are front and center come dinner time. Surprisingly my family also loves asparagus. Crazy I know... but they do. Today I've taken a moment as a point of reflection. I'm so thankful for my family and life! Sometime we forget what luxuries in life we have or even how lucky we are to be surrounding by such wonderful people.

I love cooking for the people I love. Its my way of saying I love you. Perhaps you can make this meal for those you love.

When my husband and son run in the kitchen and see this on the stove they literally scream for joy and so "Yay, Mommy's making that yummy cream sauce"! =)





My silly girl on the fort! She loves making faces at me thinking I can't reach her! Little does she know Mom's have octopus arms for their children.


Derek loves "mowing" the yard. He even asks the neighbors if they need their yard done. They sweetly say yes and pay in high fives!


One of my favorite activities to do with my kids at home is paint. It's messy awesomeness! They love that I let them get so crazy with it, like they are getting away with something.

Taco Salad.... Ole'

We eat our fair share of Tex Mex food! However, I always think it's funny when we go to other places (outside the Houston, TX area) and we end up eating at a Mexican restaurant and we are sadly disappointed because it tastes nothing like at home. Tex Mex is a very different from traditional Mexican.  Queso is a staple in this area of the US. Everyone knows what queso is. It is not that cheese substitute they serve at ball fields with chips. I have a friend who could survive alone on just queso (You know who you are)!  Also, I have found that everyone rates Tex Mex restaurants based on their favorite thing there. For example, my mother-in-law bases her judgement based solely on their margaritas. My Mom bases her judgment based on their green sauce. Flat Iron Steak with Veggie Sauté

Another yummy meal created with the help of Kroger's Prep+Pared meals. This was my husbands favorite. I felt on top of my health game making and eating this meal. The great long term advantage of making these meals are that you get to keep the recipe card that lists the ingredients and the recipe instructions which allows you to easily recreate the meal. I'm most definitely keeping this recipe and plan to make again. My kids ate the steak and the veggies (carrots and cauliflower). For this recipe I added a bit more butter to what was called for and added in some minced garlic when tossing the veggies together. Last week was tough for me when I found out about the news in Santa Fe HS. This hit too close to home and has shaken me to my core. I'm so protective of my children and cannot imagine the pain those families and affected kids are feeling right now. I do not know the answer and I think we as a community have more questions that answers.
