Bakes Potatoe “Chips”

Potatoes are so versatile! Many things you an do with them and most people like them. Being a Mom I'm always looking for new ways to get my kids to eat good things.



Preheat oven to 400. Start with washing your russet potatoes. Slice into coins. place on a lined baking sheet. Brush with melted butter on both sides and sprinkle with garlic salt. Bake in oven for 20-30 minutes. I tested their doneness by sticking the middle with a fork to ensure it was soft and easily slides out.



Take the potato chips out of the oven. Top with Cheese, Bacon and Chives. Put back in the oven for a minute to melt. Remove and serve. You can even top with a little dollop of sour cream or however you normally take your baked potato.



My family loves salmon. I tell my kids all the time this is a "super food" since super heroes are a popular topic in our home these days.



Some great words to live by below. This is probably easy at times as we surround ourselves with people we love. However sometimes we have people that we cross paths with that are not pleasant and we struggle with being at peace with them. No need to fight or say ugly things we just clearly need to part ways to stay at peace.



We took Derek skating with his best friend and it was a big hit! Matt and I have not put on skates in ages so we kind of re-learned. Of course Matt got in the groove very easily. It took me a bit longer but WE HAD A BLAST! And most importantly Derek LOVED IT! He did so well and also was so brave to try something new. I swear he picks up new things so quickly. They even played Red Light / Green Light and Derek won.



My little princess at school playing with scarves. She loves her pre-school! I believe the most enjoyable part of her day is when both Derek and her are outside at the same time. Their class rooms share a fence line so they get to see each other. She runs to the fence yelling "Bubba"! He runs over looking for her and shows her off to his friends. Also if she is scared or upset she lets him know and he tells her it will be ok and he'll get the "bad guy" making her upset! She is steadily learning her colors now and getting her molars!
