Junior League of Galveston County + their Cookbook

**** Newsflash***** HRH Duchess Kate is in Labor! How exciting! 


If you are ever looking for volunteer opportunities here is one to look into. The Junior League of Galveston County. These type of societies have been around from ages. Their purpose is to enrich their local areas through volunteerism among other goals. 

On the subject of cooking, I encourage you to check out their cookbook called Culinary Classics from Beachside to Boardwalk. I randomly stumbled up on this book one day and bought it as a Christmas present for someone. When I got it in the mail I opened it and browsed through.... poor friend who didn't get their cookbook. I just couldn't part with it. Not only does it have some wonderfully themed Gulf Coast classics but it also features many local highlights. These highlights include local restaurants and areas of town that are a staple to the landscape like the old League City Church on Main Street. There is also information on the many events that seasonal occur. Check out the great picture!

The past month has included some tough moments for our family. My daughter has had three back to back ear infections. My son had a stomach virus and I've been a basket case worrying about them! Taco Salad.... Ole'

We eat our fair share of Tex Mex food! However, I always think it's funny when we go to other places (outside the Houston, TX area) and we end up eating at a Mexican restaurant and we are sadly disappointed because it tastes nothing like at home. Tex Mex is a very different from traditional Mexican.  Queso is a staple in this area of the US. Everyone knows what queso is. It is not that cheese substitute they serve at ball fields with chips. I have a friend who could survive alone on just queso (You know who you are)!  Also, I have found that everyone rates Tex Mex restaurants based on their favorite thing there. For example, my mother-in-law bases her judgement based solely on their margaritas. My Mom bases her judgment based on their green sauce. My friend mentioned above bases her judgement on... you guessed it, queso. Me.... I'm a chicken fajita girl! Flat Iron Steak with Veggie Sauté

Another yummy meal created with the help of Kroger's Prep+Pared meals. This was my husbands favorite. I felt on top of my health game making and eating this meal. The great long term advantage of making these meals are that you get to keep the recipe card that lists the ingredients and the recipe instructions which allows you to easily recreate the meal. I'm most definitely keeping this recipe and plan to make again. My kids ate the steak and the veggies (carrots and cauliflower). For this recipe I added a bit more butter to what was called for and added in some minced garlic when tossing the veggies together. Last week was tough for me when I found out about the news in Santa Fe HS. This hit too close to home and has shaken me to my core. I'm so protective of my children and cannot imagine the pain those families and affected kids are feeling right now. I do not know the answer and I think we as a community have more questions that answers.
