Tuscany Bistro

Hello everyone! Lately we have been doing easy dinners and taking advantage of the variety of restaurants in our area. One of our Go-to places is Tuscany Bistro. One of my favorite items to order there is Tomato Basil Soup. Its just so darn good! They have a great menu, mostly Italian choices. their lasagna is out of this world as well as their ravioli, blue cheese citrus chicken and potato crusted tilapia. Below is the tilapia and ravioli we had one night. Its a small, women owned business. We have made friends with a regular waitress who is just a lovely girl from Columbia. When you walk in its like you are family. They also have a great selection of reasonably priced wines. Go for the bottle, I promise you'll drink the whole thing and if not cork and take home! 

 Please check this place out. We love finding great local joints that are unique! This bistro definitely fits that ticket!

The past month has included some tough moments for our family. My daughter has had three back to back ear infections. My son had a stomach virus and I've been a basket case worrying about them! Taco Salad.... Ole'

We eat our fair share of Tex Mex food! However, I always think it's funny when we go to other places (outside the Houston, TX area) and we end up eating at a Mexican restaurant and we are sadly disappointed because it tastes nothing like at home. Tex Mex is a very different from traditional Mexican.  Queso is a staple in this area of the US. Everyone knows what queso is. It is not that cheese substitute they serve at ball fields with chips. I have a friend who could survive alone on just queso (You know who you are)!  Also, I have found that everyone rates Tex Mex restaurants based on their favorite thing there. For example, my mother-in-law bases her judgement based solely on their margaritas. My Mom bases her judgment based on their green sauce. Flat Iron Steak with Veggie Sauté

Another yummy meal created with the help of Kroger's Prep+Pared meals. This was my husbands favorite. I felt on top of my health game making and eating this meal. The great long term advantage of making these meals are that you get to keep the recipe card that lists the ingredients and the recipe instructions which allows you to easily recreate the meal. I'm most definitely keeping this recipe and plan to make again. My kids ate the steak and the veggies (carrots and cauliflower). For this recipe I added a bit more butter to what was called for and added in some minced garlic when tossing the veggies together. Last week was tough for me when I found out about the news in Santa Fe HS. This hit too close to home and has shaken me to my core. I'm so protective of my children and cannot imagine the pain those families and affected kids are feeling right now. I do not know the answer and I think we as a community have more questions that answers.
