Orlando, Florida Trip

We just got back from a vacation in Orlando, Florida. It was a great time! Sometimes you just need to get away from the everyday life to dance like no one's watching and scream like a kid on a roller coaster! We did just that!

Here are the food highlights of our trip:

This was our meal at an Italian restaurant called Bice in the Loews Portafino Resort.

This was at Disney's Boardwalk Resort. They has a micro-brewery. Here is the flight of beers we ordered so we could try them all. One tasted like a milk shake!

I love this idea so much I plan on using it. Oreo cookies as Mickey Mouse's ears! =)
 

This is called a "Pot of Gold"! Basically its a baileys and Irish cream with a few more additions. We sucked them down so fast! We found these at Finnegan's an Irish Pub in Universal Studios.


Bonus Picture: Here is Matt driving his NASCAR around the track at Richard Petty's Raceway Park. It was a very testosterone filled day!

The past month has included some tough moments for our family. My daughter has had three back to back ear infections. My son had a stomach virus and I've been a basket case worrying about them! Taco Salad.... Ole'

We eat our fair share of Tex Mex food! However, I always think it's funny when we go to other places (outside the Houston, TX area) and we end up eating at a Mexican restaurant and we are sadly disappointed because it tastes nothing like at home. Tex Mex is a very different from traditional Mexican.  Queso is a staple in this area of the US. Everyone knows what queso is. It is not that cheese substitute they serve at ball fields with chips. I have a friend who could survive alone on just queso (You know who you are)!  Also, I have found that everyone rates Tex Mex restaurants based on their favorite thing there. For example, my mother-in-law bases her judgement based solely on their margaritas. My Mom bases her judgment based on their green sauce. My friend mentioned above bases her judgement on... you guessed it, queso. Me.... I'm a chicken fajita girl! Flat Iron Steak with Veggie Sauté

Another yummy meal created with the help of Kroger's Prep+Pared meals. This was my husbands favorite. I felt on top of my health game making and eating this meal. The great long term advantage of making these meals are that you get to keep the recipe card that lists the ingredients and the recipe instructions which allows you to easily recreate the meal. I'm most definitely keeping this recipe and plan to make again. My kids ate the steak and the veggies (carrots and cauliflower). For this recipe I added a bit more butter to what was called for and added in some minced garlic when tossing the veggies together. Last week was tough for me when I found out about the news in Santa Fe HS. This hit too close to home and has shaken me to my core. I'm so protective of my children and cannot imagine the pain those families and affected kids are feeling right now. I do not know the answer and I think we as a community have more questions that answers.
