Strawberry Cheesecake Squares

We are at the height of STRAWBERRY season. Strawberries are so juicy and wonderful. They go great in a variety of items: cakes, smoothies, salads, their scents in candles and other fresheners etc.... The US is the top producer of strawberries even though France was the first country to grow the garden strawberry. These little berries are a good source of vitamin C, flavonoids, folate, potassium, dietary fiber, manganese and antioxidants. So here is your excuse to have few berries as a guilt-free snack!

After a visit to the local Farmer's market (which will be featured in a later post) I had a big bowl of strawberries that were peaking in ripeness. Our Mother's day dinner was coming up and I wanted to use these berries... resulting in this recipe. Hope you like it! Our Moms' sure did!
 
Strawberry Cheesecake Squares
  • 3 pounds fresh strawberries, sliced
  • 1 (32 ounce or 4 cups) heavy whipping cream
  • 2 small (or 1 large) boxes of cheesecake flavored Jello pudding
  • 1 (14.4) box graham crackers
  • 1/4 cup milk chocolate chips
  1. Beat heavy whipping cream until stiff peaks form. (Do not over beat).
  2. Fold in cheesecake flavored pudding. You will use this cream in three layers so divide as you see fit.
  3. Spread small amount of cream mixture on bottom of 9x13 pan. 
  4. Line with graham crackers. You may have to break apart some to fill in the sides.
  5. Cover with another layer of cream mixture and then top with a layer of sliced strawberries. Use about half of your strawberries. I reserve the red end slices for my top layer. 
  6. Repeat the last layer of graham crackers, cream then top with strawberries. 
  7. Melt chocolate chips in microwave. Do this in 30 second intervals. Microwave for 30 seconds then take out and stir. Chocolate burns easily. You want it to be slightly soft where you are able to pour it (drizzle) over top of your strawberries. Do not let any water get into the cup you are using for the chocolate. The moment water hits the chocolate it get stiff and will be unusable. Drizzle your chocolate over top of the strawberries. 
  8. Place pan in refrigerator for at least 4 hours or until graham crackers get soft. Take pan out of the refrigerator about 15-20 minutes before serving to soften slightly. Put any leftovers back in the fridge. 
Yield: about 12 servings
