Almost There

My last two weeks at work are coming to a close. I've given 10 years to the company and am leaving with good memories and many lessons of professional development. However I'm very excited for my promotion to "Mommy at home"! My new Boss Derek is anticipating the change as well. We'll probably have a dance party to commemorate the occasion. =)

I was planning on sharing a recipe with you for taco lasagna that I got off another food blog I follow but it was not all that great. Hopefully I'll have another good one to share with you soon. I think I'm going to make taco cupcakes this weekend that you saw HERE! Yummy crunchy goodness!

 Father's day is coming up and I'm brainstorming ideas for Matt. For Mother's day Derek rolled over both ways that day! It was the best surprise for a new mommy. Obviously that was not planned in any way.

The past month has included some tough moments for our family. My daughter has had three back to back ear infections. My son had a stomach virus and I've been a basket case worrying about them! Today in life we always seem busy although I'm also very firm on the belief that we make time for the things that are important in our lives. Taco Salad.... Ole'

We eat our fair share of Tex Mex food! However, I always think it's funny when we go to other places (outside the Houston, TX area) and we end up eating at a Mexican restaurant and we are sadly disappointed because it tastes nothing like at home. Tex Mex is a very different from traditional Mexican.  Queso is a staple in this area of the US. Everyone knows what queso is. It is not that cheese substitute they serve at ball fields with chips. I have a friend who could survive alone on just queso (You know who you are)!  Also, I have found that everyone rates Tex Mex restaurants based on their favorite thing there. For example, my mother-in-law bases her judgement based solely on their margaritas. My Mom bases her judgment based on their green sauce. My friend mentioned above bases her judgement on... you guessed it, queso. Me.... I'm a chicken fajita girl! Flat Iron Steak with Veggie Sauté

Another yummy meal created with the help of Kroger's Prep+Pared meals. This was my husbands favorite. I felt on top of my health game making and eating this meal. The great long term advantage of making these meals are that you get to keep the recipe card that lists the ingredients and the recipe instructions which allows you to easily recreate the meal. I'm most definitely keeping this recipe and plan to make again. My kids ate the steak and the veggies (carrots and cauliflower). For this recipe I added a bit more butter to what was called for and added in some minced garlic when tossing the veggies together. Last week was tough for me when I found out about the news in Santa Fe HS. This hit too close to home and has shaken me to my core. I'm so protective of my children and cannot imagine the pain those families and affected kids are feeling right now. I do not know the answer and I think we as a community have more questions that answers.
