Anna’s 1st Birthday Party

January is a busy time of year in our house! We start with Anna’s birthday right after the new year and then flow right into Dereks! There are a few othe events here and there but those are the two most imprtnant events to plan! I love planning their parties.... figuring out something they are into and making it super special for them! 

First birthdays are always small and from there I let them be the guide! Anna’s donut party was perfect- simple, just close family and a few friends and yummy food! Her favorite right now is Chick Fila nuggets so that is exactly what we had along with a colorful array of glazed and cake donuts! 


I convinced myself for years I didn’t like donuts! Trying to watch your waistline with a donut in the vicinity is just insanity. However I’ve learned to have some restraint and balance in my diet. While a was pregnant at I was introduced to the most amazing donut in my life.... blueberry... muffin... donuts! Let that sink in for a minute!!! 

That year sure went by quick... Happy 🍩ne!

The past month has included some tough moments for our family. My daughter has had three back to back ear infections. My son had a stomach virus and I've been a basket case worrying about them! Today in life we always seem busy although I'm also very firm on the belief that we make time for the things that are important in our lives. Taco Salad.... Ole'

We eat our fair share of Tex Mex food! However, I always think it's funny when we go to other places (outside the Houston, TX area) and we end up eating at a Mexican restaurant and we are sadly disappointed because it tastes nothing like at home. Tex Mex is a very different from traditional Mexican.  Queso is a staple in this area of the US. Everyone knows what queso is. It is not that cheese substitute they serve at ball fields with chips. I have a friend who could survive alone on just queso (You know who you are)!  Also, I have found that everyone rates Tex Mex restaurants based on their favorite thing there. For example, my mother-in-law bases her judgement based solely on their margaritas. My Mom bases her judgment based on their green sauce. My friend mentioned above bases her judgement on... you guessed it, queso. Me.... I'm a chicken fajita girl! Flat Iron Steak with Veggie Sauté

Another yummy meal created with the help of Kroger's Prep+Pared meals. This was my husbands favorite. I felt on top of my health game making and eating this meal. The great long term advantage of making these meals are that you get to keep the recipe card that lists the ingredients and the recipe instructions which allows you to easily recreate the meal. I'm most definitely keeping this recipe and plan to make again. My kids ate the steak and the veggies (carrots and cauliflower). For this recipe I added a bit more butter to what was called for and added in some minced garlic when tossing the veggies together. Last week was tough for me when I found out about the news in Santa Fe HS. This hit too close to home and has shaken me to my core. I'm so protective of my children and cannot imagine the pain those families and affected kids are feeling right now. I do not know the answer and I think we as a community have more questions that answers.
