Blue Cheese Bites + Wild West Show

I believe when you live in the south there a certain expectations of you. We are known for our welcoming persona and hospitality. 

For example, 

When someone is walking out a door, especially a woman or someone older than you; you should open the door for them out of respect;

When you are in an environment where there are limited seats and you will be waiting awhile, you should give up your seat to anyone older or struggling to stand; 

and When someone invites you to their home for any type of event you DO NOT go empty handed, take a bottle of wine, a little relish dish or even a dessert.  

It is just the SOUTHERNLY thing to do! =)  

These little bites below are a small and easy thing to bring to one of these events. Or just to make at home to enjoy yourself. =)


Blue Cheese Bites

Burger Mixture:
  • 1lb lean ground beef
  • 1 medium onion, finely chopped
  • 2 oz. blue cheese crumbled
  • 2 tsp Worcestershire
Baking Mixture:
  • 1/2 cup original Bisquick mix
  • 1/2 cup milk
  • 2 eggs
 Topping:
  • 6 Tbs french fried onions

  1.  Preheat oven to 375
  2. Spray regular size muffin cup pan with non stick spray
  3. Combine ground beef and onion in medium skillet to cook for about 5-7 minutes or until beef is browned and thoroughly cooked. Drain and set aside to cool for 5 minutes. Stir in blue cheese and Worcestershire.
  4. In medium bowl, combine Bisquick mix, milk and eggs. Whisk or blend with fork. Spoon 1 scant Tbs of baking mixture in to each muffin cup. Top with about 1/4 cup of burger mixture. Spoon 1 Tbs more of mixture onto burger mixture in each cup.
  5. Bake 10 minutes. Remove pan from oven and top each cup with 1/2 Tbs (or pinch) of french fried onions. Bake 15-20 more minutes or fully cooked (or until toothpick inserted in center comes out clean and tops are golden brown). 
  6. Loosen each cup with a knife and remove from pan to cool. Cool about 10 minutes before serving.
  7. Optional: Serve with dollop of sour cream on top.





















League City WILD WEST SHOW
An upcoming event you may want to know about is the Wild West Show going on in Old town League City hosted by the Historical Society. They are having a 'ol west gun showdown! Maybe Wyatt Earp will be there or at least someone that looks like him! Everyone in Texas can appreciate a good old Western!
When: Saturday April 13, 2013 10am-7pm
Where: At Butler Longhorn Museum and grounds
Details: Entry Fee $10 /person, Kids under 12 are free
